Monday Night Brewing Co. will be supplying three sets of side by side beer samplings to accompany the lectures so participants will be able to sample and observe for themselves the scientific aspects of brewing being discussed in the talks.
The Physics of Beer will be centered around foam, bubbles, nucleation and head retention. To highlight this, MNBC is going to be serving their Drafty Kilt Scotch Ale on carbon dioxide and nitrogen. The Chemistry of Beer will focus on hops, alpha acids, isomerization, bitterness vs. flavor and aroma and oxidation. Bringing this to light MNBC's Eye Patch IPA will be served and compared to this pulled through a randal (seen here). Finally the Biochemistry of Beer will be geared towards (wait for it....) yeast. MNBC will be brewing up a never before seen/tasted beer with two separate yeast strains for head to head comparison. |
